Watermelon is a one of the most easily available fruits and is so refreshing. This summer drink recipe which I am about to share combines the freshness of watermelon and coolness of mint. This is quick drink to serve along with appetizers at a party or you can just prepare it in minutes and pamper yourself with a yummy, healthy treat.
Serves: 2
Preparation time: 5 mins.
Cooking time: 0 mins.
Ingredients:
3 cups watermelon,cubed
1 tablespoon lemon juice
5-6 Mint leaves
Sugar to taste
Ice cubes to serve
Directions:
- Cut the watermelon into small cubes and wash the mint leaves.
- Combine the watermelon, lemon juice and sugar in the blender and puree until smooth.
- Pour in a jar and add mint leaves.
- Refrigerate for 30 minutes. This allows flavour of mint to gel in with the watermelon.
- Take serving glasses and put ice cubes in each glass, pour in the mixture.
- Stir and serve chilled.
Tips:
- Skip the refrigeration step if you are running short of time.
- Serve chilled.
