Sevai upma is quick south indian breakfast recipe and my kids love it. I make it quite often and my baby loves its noodle like texture. It is easy breakfast recipe and ready in minutes. Another vermicelli recipe which I make is kheer or pudding and will share the recipe soon.
Serves: 2-3
Preparation time: 8 mins.
Cooking time: 15-20 mins.
Ingredients:
1 ½ cups sevai
1 medium sized onion (finely chopped)
3-4 curry leaves
½ tsp mustard seeds
½ tsp cumin
1 tsp urad dal (optional)
1 tsp chana daal (optional)
1 green chili, chopped
1 ½ cups water
½ cup Vegetables of your choice (carrots, peas, beans)
salt as required
2 tbsp oil
Directions:
- In a pan which is medium hot, roast the vermicelli until golden brown. Keep aside. If using already roasted vermicelli, you can skip this step .
- Reheat the same pan and put in the oil. Once oil is hot, add in mustard and cumin seeds.
- As they splutter, add in onions and saute till browned.
- Now, add in curry leaves, urad and chana daal and green chillies.
- Add in the vegetables and salt. Cook the vegetables until tender.
- Pour in water into the pan, and once the water begins to boil add in the roasted vermicelli.
- Mix well and cover the pan.
- Keep the flame medium and stir occasionally until the vermicelli is cooked and dry.
- Serve hot.
