Vrat ke chawal are known in India by different names like swang ke chawal, samvat rice, sama ke chawal, samo, mordhan, barnyard millets, to name few. This rice pudding is healthy and nutritious and keeps you filled for a fasting day.
Serves: 6
Preparation Time: 15 mins.
Cooking Time: 30-35 mins.
Ingredients:
4 cup whole milk
½ cup vrat ke chawal (barnyard millet)
⅓ cup sugar or to taste
10-12 raisins
5-6 almonds finely chopped
5-6 cashews
3-4 green cardamom
For garnishing:
3-4 almonds finely chopped
3-4 cashews
Directions:
- Wash and soak the rice in water for 15 minutes.
- Boil the milk in heavy bottom pan and keep stirring every 3-4 minutes so that milk does not stick to the pan.
- Make a fine powder of the green cardamom using pestle and mortar.
- Chop the nuts meanwhile.
- Now, add in the rice and keep the stirring the mixture on low flame (every 3-4 minutes) until rice is tender.
- Stir in nuts and sugar while pudding is boiling for a few more minutes, as the pudding thickens.
- Remove from heat and transfer in serving bowls.
- Garnish and refrigerate until ready to serve.
Tips:
- Pudding tastes best when served chilled. Let it come to room temperature before refrigerating.
- You can also add saffron for added flavour.
