“Summer Corn Salad” is one go to recipe in my kitchen. Whenever i have guests over or just for family dinners or lunches, this is a rejuvenating salad which can accompany any meal. It is nutritious and healthy salad so I make it all the time. If you are on a diet, have this wholesome salad for dinner. :)
Serves: 2-3
Preparation time: 5-8 mins.
Cooking time: zero mins.
Ingredients:
1 cup sweet corn
1 medium sized onion (finely chopped)
1 medium sized tomatoes (finely chopped)
1 medium sized cucumber (cut into small dices)
1 jalapeno or green chilli (finely chopped)
2 tablespoon fresh coriander, coarsely chopped
2 tablespoon fresh parsley, coarsely chopped (optional)
1 tablespoon extra virgin olive oil
juice of 1 large lemon
salt to taste
ground black pepper to taste
Directions:
- Mix together all ingredients in a large mixing bowl.
- Chill in refrigerator until ready to serve.
