“Fresh Mango Ice cream” is an easy dessert recipe which you can make at home with all natural ingredients and it tastes heavenly. All the store bought versions use mango essence or flavorings, but this three ingredient recipe is eggless and gluten free and very creamy, rich as made with fresh mangoes. Just gather the ingredients and give it a try.
Serves: 4-6
Preparation time: 20 mins.
Cooking time: zero mins. + 6-8 hours to chill
Ingredients:
2 cups mango pulp (approx. 4 alphonso mangoes)
200 gms. Fresh cream
Powdered Sugar as per sweetness of mangoes (I used 5 tablespoons)
Directions:
- Wash and peel the mangoes and cut into small pieces.
- Add the mango pieces and sugar to the blender and blend to get a smooth mango pulp.
- In a large mixing bowl, take the cream and beat it with electric mixer to get soft peaks. The volume of cream would almost double.
- Now, fold in the mango pulp into the cream gently by using cut and fold method. Make sure not to over beat the cream and pulp as it might result in loosing the creaminess in the ice cream.
- Transfer to the container and cover with lid. Freeze in the refrigerator for 2 hours and then again blend the ice cream in the blender.
- Transfer and freeze again for at least 6 hours.
- Mango Ice cream is ready. Garnish with fresh chopped mangoes. Enjoy !!
Tips:
- You can also add mango essence to the ice cream for enhanced flavor but I prefer it with all natural ingredients and avoid artificial flavorings.
- You can also add diced mango chunks at step 6, if you prefer mango bites in the ice cream.
