“Mango Kulfi” is a must try for any mango lover. It is easy to put together as requires no cooking or special equipments. You should just have mixer and kulfi molds and you are ready to go. I have added natural flavorings like rosewater and cardamom powder as they make kulfi more delightful, but you can skip if you are running short of them. Make this instant version of kulfi and enjoy the summer.
Serves: 6
Preparation time: 15 mins.
Cooking time: zero mins. + 6 hours to chill
Ingredients:
1 ripe mango
2 tablespoon Fresh cream
1 ½ cup whole milk
200 gms. Sweetened condensed milk (½ a tin)
½ teaspoon cardamom powder
½ teaspoon rose water (optional)
Directions:
- Wash and peel the mangoes and cut into small pieces.
- Add the mango pieces and condensed milk and whole milk to the blender and blend to get a smooth mango pulp.
- Now, add in cream and rose water and blend until just combined.
- Transfer to the kulfi moulds and cover. Freeze in the refrigerator for 6 hours or until set.
- To remove the kulfi from the moulds, run under running water for few seconds and gently demold.
- Mango Kulfi is ready. Garnish with chopped almonds or pistachios and Enjoy !!
Tips:
- You can also add mango essence to the kulfi for enhanced flavor but I prefer it with all natural ingredients and avoid artificial flavorings.
- You can also add diced mango chunks or nuts before transferring to molds, if you prefer mango bites and nuts in the kulfi.
