“Paneer Sandwich” is one of the easiest paneer recipe, ready in minutes. I often make it for my kiddos and they love it very much. I generally use homemade paneer as it is very soft and already crumbled for this recipe. Homemade paneer can be made while you prepare other ingredients for the stuffing and you can make a quick and healthy sandwich. This sandwich is satiating as well and very wholesome so you can make it for weekday meals as well when you don’t want to eat regular roti or rice.

“Aam ki launji | | Raw Mango Chutney | Launji | Kairi Chutney” is a popular chutney recipe in north india. In summer months when raw mango is abundant, many dishes are made from mangoes. This is one recipe which is reminds me of school days when my mom ran short of vegetables to pack in lunch box, we use to get this raw mango chutney along with salted desi ghee parathas. And it tasted yumm!!! You can also apply this chutney as a jam on bread and it tastes good too. I believe jams came from English people but these sweet and sour chutneys are Indian jams/spreads which are so flavorful and delightful.

Khoya Capsicum | Mawa Capsicum (Green Bell Pepper in khoya gravy)
“Khoya Capsicum or Mawa capsicum” is a rich and creamy dish which uses khoya as a curry base along with capsicum and carrots. I made this dish as I am a capsicum lover and thought of making a rich dish which could also be served to guests at a party.
For those who don’t know what is khoya, it is a dairy product widely used in South Asian cuisine of India, Nepal, Bangladesh and Pakistan. It is made of either dried whole milk or milk thickened by heating in an open iron pan. (source: Wikipedia). Generally many indian sweets use khoya or mawa as main ingredient and you can easily make the khoya at home. For this recipe, I used leftover residue of ghee /clarified butter which I made at home.

Poha Balls | Poha Fritters | Poha Cutlets (Pressed Rice Balls)
“Poha Balls” are easy to make snack recipe and you can make it in minutes. For this recipe, I used Poha and added some grated carrots and potatoes for binding. The result came out to be very good and these Poha balls or cutlets were crispy on the outside and moist on the inside. I added carrots which gave the bite to dish and also because I want my kids to eat carrots . ;)
