“Baked Beans on Toast” is a Mexican recipe which is an open sandwich. It combines the baked beans with oregano, then layered on toasted bread and at the end topped with cheese. This is a easy snack recipe but you can make it for quick dinners as well. Only a glimpse of this sandwich is enough to make you feel hungry, so rush to your kitchen and try the recipe now.

Ingredients:
1 cup canned baked beans
6 slices brown bread (you can use white too)
1 tbsp butter
1 tbsp garlic (finely chopped)
¼ cup onion (finely chopped)
¼ cup green capsicum/ bell pepper (finely chopped)
1½ tsp dried oregano
2 tsp dry red chilli flakes
2 tbsp tomato ketchup
Salt to taste
6 tbsp processed cheese (grated for garnish)
Directions:
- Heat a non stick on a medium heat and add the butter and wait until it is just melted.
- Add the minced garlic and saute for a minute. As its raw smell fades away, add the boiled sweet corn and chopped spinach leaves. Saute till they are cooked.
- Add onions to the pan and fry until translucent.
- Now, add in chopped capsicum and saute for a minute.
- Add the baked beans, oregano, chilli flakes, tomato ketchup and salt, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
- Switch off the flame. Divide the mixture into 6 equal portions.
- Preheat the oven at 180 degree celsius.
- Place the breads on the baking tray and toast it for 2 minutes or until golden.
- Take out the bread and butter them on one side. Now, spread the prepared beans mixture on the breads.
- Garnish with grated cheese and serve hot with tomato ketchup.
