“Bhindi Fry or Okra Fry” is one of the favourite recipe of my elder son. He picks up and eats single pieces along with chapati and I relish the sight. He is a bhindi lover like his mom :P . This is an easy recipe and tastes delightful. You can make it to please your guests too, and serve as an accompaniment to paneer and dal dishes.

Serves: 3-4
Preparation time: 10-12 mins.
Cooking time: 25 mins.
Ingredients:
3 cups bhindi/okra
1 onion (finely chopped)
1 tomato (finely chopped)
1 teaspoon jeera/ cumin seeds
A pinch of Hing / asafoetida
½ teaspoon turmeric powder
½ teaspoon red chilli powder
½ teaspoon garam masala powder
2 tablespoon oil (to fry bhindi)
1 tablespoon oil
Salt to taste
1 tablespoon amchur/dry mango powder
Fresh coriander leaves for garnish
Directions:
- Wash the bhindi and let it dry for sometime.
- When completely dry, cut the bhindi in equal size and keep aside.
- In a pan, heat 2 tablespoon of oil and add cut bhindi.
- Cook bhindi until tender and empty in another bowl. Keep aside.
- In the same pan, heat oil and add cumin seeds and hing.
- As they splutter, add in onions.
- Saute the onions until translucent.
- Add the tomato and cook until they turn soft and mushy.
- Now, add salt, turmeric, red chilli powder and garam masala.
- Saute for a minute and then add cooked bhindi. Mix well and simmer for a minute.
- Add in dry mango powder and cook covered on a low flame.
- Bhindi Fry or Bhindi Masala is ready to be served with hot pooris or paratha.
Tips:
- Wash the bhindi before hand and let it dry completely before cutting, else it tends to get sticky. If you do not have time to wait for drying, you can wipe the excess water in bhindi by dry cloth.
- Cook over low flame and do not skip adding dry mango powder as it gives extra flavour to the dish.
