Many people tend to use store bought pasta sauce (like me), before I discovered this “arrabiata sauce” or “Red sauce” at home, post this recipe you won’t buy it any further. To your surprise, italian sauces are so easy to make and also take very less time for making. So do try this at home and let me know if you like it.
Serves: 1 c of sauce
Preparation time: 5-8 mins.
Cooking time: 15 mins.
Ingredients:
5 medium sized tomatoes
3 tablespoons olive oil
3 garlic cloves (finely chopped)
2 dried red chilli (crushed) or 1 teaspoon red chilli flakes
2 medium sized onions (chopped)
½ cup tomato puree
1 teaspoon dried oregano
2 teaspoon dried basil
1 teaspoon dried thyme
Black pepper as required
Salt as required
Directions:
- Blanch tomatoes, peel, remove seeds and roughly chop.
- Heat 2 tablespoon of olive oil in a deep pan, add the dried oregano and thyme, chopped garlic and crushed red chilli. Fry for 30 seconds. Don't let the garlic turn brown.
- Now, add in onions and saute for a minute till onions turn soft and translucent.
- Add in chopped tomatoes from step 1 and give a mix.
- Now add in tomato puree and mix. Add salt and mix well. Cook for two to three minutes while crushing the tomatoes.
- Add in dried basil and 1 tablespoon of olive oil.
- Stir and switch off the flame.
- Arrabiata sauce is ready. Store it in glass container and refrigerate until use.
Tips:
- Keep refrigerated and use in 3-5 days.
- You can add italian seasoning mix instead of adding herbs separately.
- Be generous in using olive oil as it increases the shelf life of the sauce.
