“Lauki Sabzi | Tamatar Lauki” is one of the abundant summer vegetable readily available at grocery stores. Luaki has many health benefits and is easy to digest. It is highly recommended for elderly people to keep the digestive system in place. This punjabi lauki sabzi goes well with rotis/ parathas. My kids love to eat this and for me it is easy to make :P.

Serves: 3-4
Preparation time: 10 minutes for chopping bottle gourd
Cooking time: 15 mins.
Ingredients:
1 medium sized bottle gourd (chopped)
1 to 1 ¼ cups water
½ teaspoon cumin seeds
1 green chilli (chopped or slit lengthwise)
2 medium sized tomato (roughly chopped)
¼ teaspoon red chilli powder
¼ teaspoon turmeric powder
¼ teaspoon garam masala
½ inch ginger (roughly chopped)
2 tablespoons ghee/oil
Salt as required
Directions:
- In a mixer jar, grind the chopped tomatoes and ginger into a smooth paste. Keep aside.
- Wash, peel and chop bottle gourd.
- In a pressure cooker, add ghee/ oil and when hot, add in cumin seeds.
- Once they splutter, add in green chilli. Fry for few seconds.
- Add in tomatoes and ginger paste and cook until they start releasing oil.
- Add in the salt, turmeric, red chilli and garam masala powder. Saute for 1-2 minutes.
- Add in chopped bottle gourd. Mix well.
- Put the lid of the pressure cooker and cook for 3-4 whistles on medium flame.
- Once the pressure is released, open the lid and stir the prepared sabzi.
- Garnish with fresh coriander leaves and Lauki sabzi | Lauki tamatar is ready to be served.
Tips:
- The consistency of the sabzi is semi liquid. If you want a drier version, limit the quantity of water to ¾ to 1 cup.
